Sweet, Yet Tart, Like No Other

As I wrote in a previous article, “A Grape Experience,” my beau and I picked grapes at a local farm last weekend. Our efforts yielded 6 pounds of Carlos (white) and Noble (red) cultivars of the Muscadines (rotundifolia) These grapes, the farmer assured us, were not sprayed with chemicals.

At home, I measured out the pounds needed to make grape jelly. That left almost 2 pounds for us to snack on. Yay!

My first try at this turned out well. I used equal amounts of the white and red grapes, and that yielded a tart-sweet jelly with a pink-ish color.

The white grapes (Carlos cultivar) looked iridescent, with that “pearly” finish. The red ones (Noble) looked hearty and rich. They both are good eating, too.
Making the jelly was labor-intensive. After cooking the fruit, there was the process of squeezing out the juice, discarding the pulp and seeds, and then straining it before adding the pectin and sugar.

I will never again buy grape jelly from the store. Ever. Never. Homemade tastes fresh, very “grape-y,” and light. We had some of this on English muffins for breakfast. It was heavenly!

Later this month, I plan on returning to the farm to pick a batch of only the red grapes, so that I can make a straight dark jelly.
